We spent the day with Chef Coulson at Bar Clams, a cozy East Coast-inspired spot from Matty Matheson that brings the charm of the Atlantic to the heart of Toronto. Tucked away on Dundas Street West, the space is both a love letter to Matheson’s roots and a celebration of craft. From the locally sourced ingredients to the warm, familiar energy that runs through every detail, it's a place that feels like home.
Chef Coulson walked us through the menu, which blends East Coast classics with family recipes. Highlights include Toonie Tuesdays (arguably the best oyster deal in the city), a rich crab and trout spinach dip, bluefin tuna, and molasses bread based on Matty’s mom’s recipe.
We joined Chef Coulson behind the scenes as he prepped a few of Bar Clams' signature dishes, including a sustainably sourced rainbow trout, filleted with care and precision. It was a full day of hands-on cooking, a few breaks, and a Guinness to keep things moving. What’s a kitchen day without one, right Chef?
